ABSTRACT ANTIOXIDANT ACTIVITY OF GINGER (Zingiber offiicinale var. Officinarum) EXTRACT USING DPPH METHOD (1,1-DIPHENYL-2-PICRYLHYDRAZYL) Nova Goldie Tabitha 1541012 Ginger is an herbal plant that is widely used as a flavor, refreshing drink, herbal medicine for various degenerative diseases, as an antibacterial and a source of antioxidants. One of the benefits of ginger is to counteract the negative effects of free radicals on the body which can be prevented by compounds called antioxidants. Ginger is a potential plant to be developed, especially in terms of developing its bioactive components. The purpose of this study was to determine the differences in antioxidant activity from the processing of elephant ginger with several variations in the types of solvents and variations in the concentration of antioxidant activity. This study used the DPPH (1,1-diphenyl-2-picrylhydrazyl) method to test compounds and evaluate their antioxidant activity. Data analysis was carried out in the form ANOVA, and Duncan's Multiple Distance Test. The results of this study indicate that in the processing of elephant ginger using two observation methods namely powdered and fresh simplicia, different results were obtained for antioxidant activity. Processing of ginger on powder obtained a greater antioxidant content, so the antioxidant activity obtained was also higher. Besides that, it was obtained significant results from the use of solvent types in the extraction process, where from the extraction process using methanol solvents obtained higher antioxidant activity than hexane and dichloromethane solvents and variations in concentration at 800 ppm gave higher antioxidant activity in each treatment.
